Rolling silverware
Place all utensils into small container full of soda water.

Soak for 3 minutes.

Polish and dry all utensils and set on clean flat surface.

Create stacks of 1 steak knife and 2 forks, with the steak knife on bottom.

Do your sidework.  Polish silverware, restock napkins and glasses, refill the ice machine.  There are different things in each restaurant that can be done when work is slow; do them.  Perfect them.  If you have no free time, make sure they get done at the beginning of your shift or at the end when things are slowest.  Don't give anyone a reason to complain about you. Setting a tables
Place the dinner fork and salad fork on the napkin. The dinner fork should be very close to the plate without touching it, and the salad fork should be just a centimeter or so to the left of the dinner fork. The tines of the forks should be pointing away from the diner.
